How to Enjoy This Unique Baumkuchen
Hokusai’s iconic Edo-period ukiyo-e series, “Thirty-Six Views of Mount Fuji,” has entered the world of sweets. Katanukiya, a specialty shop in Ginza 1-chome known for its cut-out baumkuchen (a traditional German layered cake), has launched a new product inspired by the series, called “Fugaku Shokei.”

The name “Fugaku Shokei” incorporates “Shokei,” meaning “small memorable views.” Using baumkuchen and macarons as a canvas, Katanukiya brings Mount Fuji to life with ultra-high-definition food printing. The sweets faithfully capture the delicate colors and intricate compositions that Hokusai originally sought to depict.

The cut-out baumkuchen features a layer of white pound cake made with egg whites on top of a flat-baked baumkuchen, with designs printed on the surface. A playful touch allows the designs to be cut out along the lines. The motifs are inspired by famous works such as “The Great Wave off Kanagawa,” “South Wind, Clear Sky,” and “View of Mount Fuji from Owari” (Owari Fuji Mihara).




The “Baton Macaron” is a playful new confection that transforms classic macarons into a rusk-like treat. Its stick-shaped form allows for vivid designs to be printed on a flat surface, with eight motifs, including “Shanyu at Yamashita” (Shower at Yamashita), “Fukagawa Mannenbashi” (Under Mannen Bridge in Fukagawa), and “Enoshima in Sōshū” (Enoshima in Sōshū Province).

Katanukiya combines this innovative approach with its signature layered, cut-out dough technique, leaving the final step to the customer. This interactive style turns eating into a fun experience, where the excitement before cutting and the joy of carefully popping out the designs are all part of the delight of the confection’s colorful appearance and crisp texture.
